Keep the edge of the knife in good shape and all it takes is 3 or 4 pulls thru on ech side and it as good as new. I have a HARD ATS-34 steel knife that is a pain to pull an edge on. If the knife does get too dull or a major ding in the edge a diamond stone is best but I hate to sharpen knives with anything else if I can help it.
